Green Garlic Marinated Eggplant

Green Garlic Marinated Eggplant

Makes 4 cups


1 cup water
1 cup apple cider vinegar
1 tbsp whole coriander seeds
1 tbsp mustard seed
1 clove garlic
1/2 large eggplant, cubed
1 bunch rainbow chard, stems only
1 bunch green garlic, green parts only, diced
1/2 cup olive oil
1/4 tsp smoked paprika
salt to taste


Place first seven ingredients in large sauce pan and bring to a boil. Simmer until eggplant is tender, about 15 - 20 minutes.  Strain through a fine sieve.  Place in a bowl and stir gently to cool. Add olive oil, paprika and salt to taste. 

Keep in a jar and add to pasta, tostadas, bread or eat as is. I used it to top my black bean soup. 


 Makes about 2 cups.
