Roasted Cumin & Smoked Paprika Carrot & Turnip Salad
Serves 2 as a main or 4 as a side
Pinch smoked paprika
1 bunch carrots, halved lengthwise
1 bunch turnips, halved lengthwise
2 tbsp olive oil
3 heads baby bibb lettuce
handful of mixed leaves
Preheat oven to 400. Combine spices, carrots, turnips, salt and olive oil in a bowl and toss. Roast in oven for 25 minutes. Allow to cool.
Wash greens and toss everything to combine with green goddess dressing or another of your favorites and serve.
